35% COCOA

So-called full-cream milk chocolate contains just under 40% cocoa solids. Here above all it is the sweet ingredients that dominate, and the slightly bitter cocoa is confronted by a distinctly detectable sweetness. A dry wine has no chance here. But fruity and noble sweet white and red wines – such as Sauternes, Port, Riesling Auslese and Ice Wine – will parry the chocolate’s sweetness and oppose it with their sweet multiplicity of flavours. A balancing act with a guarantee of pleasure.

50% COCOA

When there are 50% cocoa solids the bitterness dominates slightly over the sweet ingredients in the chocolate. As the sweetness is only slightly in the background, what is required here are especially full-bodied wines with low acidity, such as a fruity-sweet Gewürztraminer, Merlot or a Grenache or alternatively a Tawny Port or Medium Dry Amontillado Sherry.

60% COCOA

Chocolates with 60% cocoa solids and more are distinctly dominated by the flavour of cocoa. The sweetness is restrained, and the elegantly bitter ingredients underline the taste sensation. To go with this a heavy, well structured red wine is ideal if it shows good fruit and finesse. Mature wines whose tannins are already a little refined taste best. Ideal companions, for example, are a good quality Tempranillo, Pinot Noir, Nebbiolo, or Barbem, or alternatively a Cream Sherry or Ruby Port will go extremely well with these chocolates.

77% COCOA

Especially aromatic types of red wine such as a Zinfandel or a Shiraz, or else port or a Cabernet with an exceptionally heavy structure are an excellent compliment to chocolate with about 77% and more cocoa solids. The flavours here are stamped by a semi-dry note. This distinct hint of bitterness and the chocolaty-dry taste sensation demand heavy, lusty, full-bodied wines such as a Malbec, Carmenère or a very sweet Pedro Ximenez from Andalusia.
